Childhood memories: Dutch zandkoekjes
As a young girl I remember baking cookies with my mother. They were “zandkoekjes”, a type of shortbread like cookie that always remind me of my childhood. They might actually be the cookies that kicked of my baking career, because they were the first thing I’ve ever baked.
Anyway, I still love to bake these cookies from time to time because they’re easy and of course delicious. I have to admit it took me a lot of failed attempts before getting to this perfect recipe. Yes, even when trying out other peoples recipes I failed miserably. Thank god I finally managed to figure out where I went wrong and I can now share this one with you guys.
What you need
This recipe bakes about 25 cookies.
- 250 grams flour
- 100 grams sugar
- 1 pack vanillasugar (8 grams)
- 1 egg
- 125 grams butter
- pinch of salt
- Mixing bowl
- Rolling pin
- Cookie cutters of a small glass
- Oven tray with baking paper
Save the cookies in a closed tin for max. 5 days,
Preheat the oven at 200°C. Put all the ingredients in a mixing bowl and knead it into a large ball of dough.
Put some flour on the kitchen counter. Put on the dough and with the rollling pin roll it into a flap of about half a centimeter thick.
Take the cookie cutters and make cookies out of the flap of dough. Put the cookies on the oven tray with baking paper. Keep doing this until you’re all out of dough.
Bake the cookies for 15 minutes. Every oven is different so make sure you check up on the cookies and don’t let them burn. Let the cookies cool a little before eating them.
