Ham-melon salad with couscous

Last week we finally got to enjoy some summer weather in Holland. I’m not complaining, but when it’s hot outside I really don’t feel like standing over a hot stove. Because I still want to eat healthy and not get take out food all the time, I make a lot of salads. This one with ham, melon and couscous has a nice summer vibe and is deliciously refreshing!

What you need

For 2 people.

  • 100 grams mixed lettuce
  • 50 grams couscous
  • 4 slices raw ham
  • 1/4 melon
  • 3 tablespoons sunflower oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon mustard
  • 1 tablespoon honey

Kitchen supplies

  • Saladbowl
  • Cutting board
  • Saucepan
  • Colander (optional)


  • Max. 1 day in the fridge in a closed container.

Put the couscous in a sauce pan and cook following the instructions on the package. When the couscous is done, put it in the colander and rinse with cold water. You can also just let the couscous cool if you don’t have a colander. Make sure the couscous is dry or you get a really wet salad.

Cut the melon into small cubes. Mix the sunflower oil, mustard, honey and balsamic vinegar in the salad bowl. Add the lettuce and mix well.

Add the couscous and melon and mix again. Rip the ham into small pieces and add to the salad. Enjoy!
