Breakfast pies

As soon as I wake up my mind starts thinking about food and that’s one of the reasons I like to put a little more effort into my breakfast. With these delicious and healthy breakfast pies you’re always assured of a great start of the day. Ready in a jiffy, but if you’d rather sleep in you can also make them the night before. The only thing you’ll have to do in the morning is scoop in the filling and enjoy them. So if you want to guarantee a great start of your day, you should definitely try these!

What you need

This recipe makes about 3 to 4 bottoms.

  • 100 grams almond flour
  • 100 grams oatmeal
  • 1 tablespoon honey
  • little bit of water
  • 100 grams Greek yogurt or quark
  • fresh fruits, for example strawberries, raspberries or blueberries
  • handful cacao nibs

  • You can save the bottoms without topping max. 4 days in a closed container

Preheat the oven at 180°C. Mix the almond flour, oatmeal, honey and a little bit of water in a large bowl until you have a sticky dough. If it’s so dry that the ingredients won’t stick you should add a little bit more water.

Grease the tartlets pans with some butter or coconut oil. Equally divide the dough over the pans. Make sure to press them well so they don’t fall apart during the baking process. Bake the bottoms for 15 minutes. Let them cool in the pans until they’re totally hardened and so the toppings won’t get warm when you add it.

Fill the bottoms with your choice of Greek yogurt or quark and add fruits of your choice.
