Chunky choco peanut butter cookies
From when I was a kid until now peanut butter has always been one of my favorites things to put on bread, but also just to take a spoon and eat it right out of the jar. It’s no surprise that I was over the moon excited when Mister Kitchen delivered ONE METER OF PEANUT BUTTER to my doorstep and a complementary free peanut butter t-shirt woohoo!
With 7 new flavors of peanut butter it couldn’t take long before I would bake something with it and I sure did you guys. These chunky cookies combine the best of both worlds: chocolate and peanut butter. Besides that they’re still quite healthy, contain some great nutrients and give you a great energy boost. You can use them as a part of your mealprep to ensure you always have a (semi)healthy snack on hand to cure the cravings, because you can easily save them in your freezer.
What you need
This recipe makes 10-12 cookies.
- 100 grams spelt flour
- 50 gram almond flour
- 50 grams oatmeal
- 3 tablespoons honey
- 50 ml (almond)milk
- 2 tablesspoons melted coconut oil
- 1 tablespoon baking powder
- pinch of salt
- 3 tablespoons Mister Kitchen chocolate peanut butter
- Mixing bowl
- Cutting board
- Baking tray with baking paper
- Max. 3 days in a closed container or 2 weeks in the freezer.
Preheat the oven at 170°C. Put the flours, oatmeal, honey, milk, baking powder, egg, coconut oil and a pinch of salt in the mixing bowl. Use a fork to mix all the ingredients together until you have a firm dough/batter like substance. Add 3 tablespoons of Mister Kitchen chocolate peanut butter and stir.
Break the chocolate in chunks and use a knife to cut them into some smaller pieces. Add the chocolate to the dough and gently scoop through.
Use 2 tablespoons to make about 10 lumps of dough on a baking tray covered with baking paper. They don’t have to be nice looking cookie shaped lumps, it’s okay if they’re chunky (hence the title).
Bake the cookies in the center of the oven for 25 minuts until they are done. They are still a bit soft when you take them out of the oven. Let them cool entirely before eating.
